Ingredients for Kolam rice
recipe – Gujarati Masala Bhaat:
1 cup wada kolam rice
1 cup mixed vegetables
(carrot, bean) – cubed and boiled
2 tablespoon ghee
1 teaspoon whole spices
(clove, cinnamon)
½ teaspoon cumin seeds
½ teaspoon mustard seeds
¼ teaspoon asafoetida
½ teaspoon chilli powder
½ teaspoon turmeric powder
½ teaspoon garam masala
powder
½ teaspoon salt
Recipe for Kolam rice recipe – Gujarati Masala Bhaat:
Kolam rice recipe – Gujarati Masala Bhaat Step 1:
First wash the wada kolam
rice and strain the excess water from it. This is important to get
non-sticky basmati rice like texture.
Kolam rice recipe – Gujarati Masala Bhaat Step 2:
Cook the rice in a water-rice ratio of 2:1. Do not completely cook
the rice. Turn off the flame when the rice is cooked yet not completely soft.
Kolam rice recipe – Gujarati Masala Bhaat Step 3:
Add the ghee in a pan followed by three spices – asafetida,
mustard seeds and cumin seeds. Add the whole spices as well. Wait for less than
a minutes and sauté the boiled vegetables in the same pan. Once done add the
cooked rice.

Add the rest of the spices from the above list and salt. Now, mix
everything together. Make sure the flame is lowest at this point. Cover the pan
and cook the rice for 3-5 minutes. Your Kolam rice recipe – Gujarati Masala

can be made a one-pot recipe by not cooking the rice in advance. Follow the
same process as mentioned above from adding ghee in pan to uncooked rice.
